Food for thought

You probably haven’t heard of the bougatsan – because 10 months ago it didn’t exist. This fusion pastry was borne of the financial crisis and the Instagram generation.

I didn’t expect to write a story about a pastry. And it is only a little story, in the Guardian. But sometimes you go places (Thessaloniki, in this instance) and find people doing weird things with cream, baked goods and social media, and you want to tell other people about it. So, allow me to introduce the bougatsan…
